ELABORATION
After de-stalking we proceed to a pre fermentative cold maceration. Following a gentle and low yield pressing, the must  settles in insulated tanks at a temperature no higher than 10ºC. Once it is perfectly clear, the fermentation starts for a period of about 21 days at a temperature of 12º-14ºC.

OAK AGEING
In stainless steel tanks in its lees for a period of  8 weeks.

TASTING NOTES
Pale yellow with green hues.  Aromas of fresh white fruit (pear), with a fragrant flowery background.  Fresh, smooth and well balanced.  A slight crisp finish enhances its flavours.

PRODUCTION
10,500 bottles of 75 cl.
